Food | Cajun Chicken & Chorizo Risotto

Cooking is soothing, putting together different flavours and and ingredients and making the work together. Trying different recipes, experimenting and blending different elements to make something awesome. Risotto is a bit of a pain to make in terms of time, but it's also a great dish to blend different flavours easily and come up with something awesome for everyday meals.






In terms of the elements, you really don't need that much for risotto, but it does take a little bit of time to make sure the rice is properly cooked. I've played with a few different ingredients putting them together, and I've found I absolutely love this combination. It's a great one for an everyday meal to put together after a long day at work. And so satisfying. It's not one for those healthy eaters, but it is super tasty.

You'll need:
250g chicken breast (cut up)
Xg of chorizo cubes
1 mug of risotto rice
750ml of chicken stock
1 tbsp of cajun spices
Splash of white wine

Start by cooking your chicken in a large wok, make sure it's coloured all over. Just before you think your chicken is cooked add your chorizo and cook for a couple of minutes. Mix it all together and coat the chicken in the chorizo oil. 

Once it's all cooked, put it all aside into a bowel. Pour your risotto rice into the and cover with some of your stock. Mix it all up until the rice absorbs all of the stock. Keep adding stock bit by bit until you're happy with the rice. Then add your splash of white wine, and your cajun spice. Mix it all up until the wine is absorbed. Then add your chicken and chorizo back into the mix. 

Mix everything together and cook for a couple of minutes to make sure everything is warmed through. Then serve! Easy peasy and oh so tasty. If I'm trying to be healthy I add some spinach into the rice and give myself smaller portions, but right now - let's dig in.
