Quick & Easy Beef Stroganoff with Noodles

This is easily one of my favourite meals. I love a bit of beef (no puns please) and stroganoff is something I always go towards in a restaurant. So when I moved out I wanted to learn how to make this pronto!

Now, this recipe is a bit of a hybrid between various different recipes I've tried, and there is a healthier version if you want to go down that route, which I'll pop down below. One big difference is the noodles. Traditionally it's done with rice, however my hubby isn't the bigger rice fan, so mixing it up and adding the noodles was the perfect solution. It's quick, easy, and is all done in one pan - simple washing up! So let's get started.

Ingredients
  • Mushrooms, chopped up
  • Strips of beef steak (I used beef escalopes as they're cheaper, but if you can afford it go for stirloin or fillet and cut into strips)
  • 1 tbsp smoked paprika
  • 100g of beef stock
  • 100g of double cream or 100g of creme fraiche if you're on a health kick
  • 150g of quick to cook noodles (I use these noodles from Sainsburys) 

Method

So in terms of prep, I always cut up my mushrooms and beef into strips, and make up my stock ready to pour in. Otherwise, it's all go and easy. First take a non stick wok, and fry up your mushrooms. Once they have a bit of colour onto them, throw in your beef strips and cook them up until they're all coloured. Once they're cooked to how you like, take your smoked paprika and sprinkle over the the meat and mushrooms. Mix in everything and coat it in the spice. 

Now, pour in your stock, mix everything in, and then pour in the cream or creme fraiche and mix it all together. Then take your noodles, and break them up putting them in the whole mix, and stir everything together until it's all cooked through, the sauce has thickened and the noodles and all floppy and ready to eat. If you need to, add a little cornflour to the mix to thicken the sauce. Then dish out, and it's all done!

This really is very quick and easy to make, and it's super tasty. It also goes nicely with feta sprinkled over the top. Yum. It's a bit of a mix on the usual stroganoff, but I love it. The paprika adds a little spice, and the noodles taste awesome in the mix.
