One Pot Spicy Pork

I love cooking, when I get home from work it's the perfect way to switch off and go into home mode. But the last thing you want to do is spend forever slaving away and cooking. This dish is one of my favourites, it's quick and easy to make and super tasty. It also only gets made in one dish so very little clearing up. 












This recipe originally came from one of the Hairy Dieter's books, and it's a winner. One Pot Spicy Pork. So what will you need?

Ingredients:
  • Extra lean stir fry pork
  • Chorizo
  • Green beans
  • Pepper - colour of your choice
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Mild chilli powder
  • 300ml Chicken stock
  • Rice

Method:

In terms of prep, there isn't too much to do. Simply cut up your peppers and green beans. I buy the ready cubed chorizo so there's no prep in that. Otherwise it's just make up around 300ml of chicken stock ready. 

So first up, take a non stick wok, and fry up your extra lean port pieces. If you don't like pork then this works well with chicken as well. Fry this until you see some colour, Then add in your chorizo, green beans and yellow peppers and fry them up until they have colour. Once this is done, put in the spices and coriander. Add the rice (about a mug full) and mix all together. You then want to add your stock, I would say enough is where it just covers the rice. Heat gently until it boils, then turn down to a simmer. Then cook until all the water is absorbed and the rice is cooked. 

Then just dish up! It's that quick and simple. Minimal washing, and super tasty. The original recipe was from the Hairy Dieters, so it's actually quite healthy, I've just done some very minor adjustments along the way.
