Food | Autumnal Cinnamon Cookies

Totally on the opposite scale to healthy eating, I decided to cook up some autumnal treats. and nothing says autumn more than cinnamon. So I had a look through some recipes and cooked up my own version of these very yummy, light and tasty biscuits (or cookies... depending on what you want to call them).






These are really easy to make and can be done with things you'll more than likely already have in the kitchen.

Ingredients for Cookies
  • 150g plain flour
  • 150g self raising flour
  • 125g butter
  • 3 tbsp cinnamon
  • 1 egg
  • 100g caster sugar
Ingredients for Icing
  • 100g Icing sugar
  • 3 tbsp Water
Before you do anything, remember to pre-heat your oven! (I always forget to do this...). Pop it on 160 degrees, and you'll probably need two shelves. While this is heating I take out two mixing bowls, one larger than the other. In the large one I sift together both types of flour and the cinnamon. Then set it to one side. In the smaller bowl, I mix together the butter (I find it easier to have this a little bit melted) and your sugar until it's all smooth. Then add your egg and mix it all together well.

Pour your wet mixture into your dry mixture (hence the bigger bowl) and mix together until you have a dough. I find it so much easier to do this with my hands after a couple of minutes as I can really start to mould it. Once you're happy, put the dough on a lightly floured board, and roll out until it's about 5mm thick. Then, take your chosen cookie cutter shape and cut out. I got about 24 cookies all together out of this mix at this side. This took up two trays (hence two shelves in the oven). Once happy, pop the trays in the over for 10-15 minutes.

Once you've taken your cookies out and they're cool you can add some icing. Now, mine is quite plain as I wanted cinnamon to be the dominant flavour, however you can obviously flavour it as you would like. I mix together around 100g of icing sugar with 3 tablespoons of water until it's smooth. Then I drizzled the icing over the cookies to get the patterns above.
